Vegetable Skewers

Grilled vegetable sticks make for a festive side dish instead of the traditional barbecue.  Play around with the vegetables you use by adding seasonal vegetables available, from young corn or even portabello mushrooms.  Enjoy it with a different blue cheese dressing or go Filipino with a touch of barbecue flavored sauce.  Use lemongrass sticks for a different flavor.

Yield: 8-10 pieces skewers

Ingredients:

  • 1 cup button mushrooms
  • 1 piece green bell pepper, cut into wedges
  • 1 piece red bell pepper, cut into wedges
  • 3 pieces eggplant, cut into wedges
  • 350 grams firm tofu, cut into cubes
  • Dressing:
  • 50 grams blue cheese
  • 2 tablespoons low fat milk
  • 200 grams low fat yogurt
  • 1 piece white onion, minced
  • 1 clove garlic mince
  • 1 tablespoon spring onions, mince
  • 1 tablespoon lemon juice

Procedures:

  1. Skewer mushrooms, bell pepper, eggplant and tofu alternately on BBQ stick.
  2. Grill vegetables until browned all over.
  3. Prepare dressing by combining ingredients.
  4. Serve drizzled with dressing on top.
