Tuna Sandwich Spread

“A very healthy snack.  And something that is different from the usual,” describes Chef Junjun as he shares the recipe of this tuna sandwich spread.  Also, he advises that in preparing tuna (for any kind of meal), it is best to “saute it with onion and garlic so that its real taste will come out”.

Yield: 5 servings

Ingredients:

  • 1 tablespoon canola oil
  • 1 piece small onion, finely chopped
  • 2 teaspoons minced garlic
  • 1 can tuna in brine, drained and flaked
  • 1 bundle baguio spinach leaves only, blanched and squeeze dried
  • 1/2 cup non-fat milk
  • 1 cub low fat cream cheese
  • 1/4 teaspoon Worcestershire sauce
  • 1/2 teaspoon hot pepper sauce
  • 3/4 cup shredded Mozzarella cheese
  • salt and pepper

Procedures:

  1. Saute chopped onions and garlic in canola oil.  Cook until onions are translucent.
  2. Add in tuna and cook until mixture is dry.  Add in spinach leaves and season well. Set aside.
  3. In another bowl, boil milk, add cream cheese, and then mix until well-combined.
  4. Add in tuna mixture, Worcestershire sauce, hot pepper sauce.  Cook for two minutes.
  5. Remove from pan, mix in mozzarella cheese, top with more cheese and bake for 20-25 minutes or until top of mixture is golden brown.  Serve with sliced bread or bread sticks.
