Green salads offer so many different variations it is hard to limit the ingredients to use. Â In this shrimp cobb version, we use tomatoes, shrimps, and corn, but you can add cucumber, carrots, and other fresh vegetables you can find. Â If you want to add some hard boiled egg, you can do so – just take out the yolk and use the whites.
Yield:Â 4 portions
Ingredients:
- 2 cups romaine lettuce, torn in to bite-size pieces
- 4 pieces tomatoes, seeded and chopped
- 1/4 cup corn kernels
- 20 pieces Shrimp, cooked and peeled (about 1/4 kilo)
- to taste freshly ground Black Pepper
- Dressing:
- Splenda
- Dijon Mustard
- Vinegar
Procedures:
- Combine lettuce, tomatoes, corn and shrimp in a bowl.
- Season with pepper.
- Whisk together ingredients for dressing.
- Toss with dressing and serve.
