Shrimp Cobb

Green salads offer so many different variations it is hard to limit the ingredients to use.  In this shrimp cobb version, we use tomatoes, shrimps, and corn, but you can add cucumber, carrots, and other fresh vegetables you can find.  If you want to add some hard boiled egg, you can do so – just take out the yolk and use the whites.

Yield: 4 portions

Ingredients:

  • 2 cups romaine lettuce, torn in to bite-size pieces
  • 4 pieces tomatoes, seeded and chopped
  • 1/4 cup corn kernels
  • 20 pieces Shrimp, cooked and peeled (about 1/4 kilo)
  • to taste freshly ground Black Pepper
  • Dressing:
    • Splenda
    • Dijon Mustard
    • Vinegar

Procedures:

  1. Combine lettuce, tomatoes, corn and shrimp in a bowl.
  2. Season with pepper.
  3. Whisk together ingredients for dressing.
  4. Toss with dressing and serve.
