Shrimp and Mango Salsa Salad

I just love munching on fresh salsa. Enjoy this version that combines shrimp and mango salsa. Instead of using a high-calorie dressing, top your greens with a flavorful salsa. Of course, you can enjoy it by itself or as a topping for some grilled fish.

Yield: 4 to 6 servings

Ingredients:

  • 1/4 kg medium to large shrimps, peeled and cooked
  • Salsa Mixture
  • 2 pieces ripe mangoes, peele, seeded, and cut into chunks
  • 1 piece tomato, chopped
  • 1 piece red onion chopped
  • 1 bunch wansuy, chopped
  • 2 pieces siling labuyo, chopped
  • 1 tablespoon olive oil
  • 2 tablespoons calamansi juice
  • 1/4 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 head lettuce

Procedures:

  1. Combine cooked shrimp with the ingredients for the salsa mixture.
  2. Cover and chill for 1 hour.
  3. Served chilled shrimp and salsa mixture over spring greens.
