Red Beets and Lettuce Sandwich

Instead of meat, Chef Junjun recommends the sweet taste of red beets to combine with the lettuce. Without red beets, one may try other healthy options such as zucchini or eggplant.

Ingredients:

  • 2 pieces Whole wheat bread
  • Olive oil
  • 1 piece Red beets, boiled and sliced
  • a few leaves of Lettuce
  • Salt and pepper

Procedures:

  1. Lay whole wheat bread on a tray and spray each side with olive oil. Lay lettuces on them and dot red beets around each slice. Cover with the other whole wheat bread, slice into two then serve.
