Pots De Creme

This is Chef JunJun’s leche flan made of chocolate. It uses eggs, milk, chocolates, and the sugar substitute isomalt.

Yield: 10 to 12 servings

Ingredients:

  • 1 1/2 cups heavy cream
  • 1 cup fresh milk
  • 180 grams sugar-free dark chocolate, finely chopped
  • 1/2 tsp. instant coffee powder
  • 2 tsos cocoa powder
  • 2 pieces eggs
  • 4 pieces egg yolks
  • 1/3 cup sugar substitute (eg. Splenda granular)

Procedures:

  1. Preheat oven to 300 F.  Prepare 12-15 pieces ramekins.
  2. On low heat, combine heavy cream, fresh milk, chopped chocolate, cocoa, coffee powder, and cook. Mix with wooden spoon until chocolate is melted. Cook well.
  3. Mix eggs, egg yolks, and sugar substitute until well mixed. Temper warm chocolate mixture. Add more chocolate mixture.
  4. Pour into ramekins.  Remove foam or any bubbles that form on top.
  5. Put ramekins in bain marie (cooking utensil).  Bake for 1 – 1 1/2 hours until set.  Leave to cool cover, and refrigerate before serving.
