Oriental Coleslaw

Tired of the same old coleslaw?  Spruce up your recipe with some added crunch from dried noodles.  Toss out the old dressing and add some zing with this invigorating oriental dressing that will make you ask for more.

Yield: 4 to 6 portions

Ingredients:

  • 2 cups Napa cabbage, shredded and chopped into bite-sized pieces
  • 1 cup carrots, peeled and chopped
  • 1/2 cup raisins
  • 3 pieces spring onions, chopped (white and light green parts only)
  • 1 package light Oriental flavor Ramen noodles, crushed in packaged
  • Dressing:
    • 1/4 cup Light Sesame Oil
    • 1/3 Cup Olive Oil
    • 1/2 cup Rice Wine Vinegar
    • 2 tablespoon thai chili sauce
    • 1 teaspoon ginger, minced
    • 1 teaspoon Dijon Mustard

Procedures:

  1. Toss Napa cabbage, carrots, raisins and spring onions together in a large salad bowl.
  2. Open the noodle package and pour the crushed noodles over coleslaw.  Discard the seasoning packet.
  3. To make the dressing, whisk together the sesame oil, olive oil, rice wine, vinegar, Thai chili sauce, ginger and mustard
  4. Pour the dressing over the coleslaw mixture and toss.
  5. Refrigerate the coleslaw at least one hour to marry flavors before serving.
