Oriental Coleslaw

Tired of the same old coleslaw? Â Spruce up your recipe with some added crunch from dried noodles. Â Toss out the old dressing and add some zing with this invigorating oriental dressing that will make you ask for more.
Yield:Â 4 to 6 portions
Ingredients:
- 2 cups Napa cabbage, shredded and chopped into bite-sized pieces
- 1 cup carrots, peeled and chopped
- 1/2 cup raisins
- 3 pieces spring onions, chopped (white and light green parts only)
- 1 package light Oriental flavor Ramen noodles, crushed in packaged
- Dressing:
- 1/4 cup Light Sesame Oil
- 1/3 Cup Olive Oil
- 1/2 cup Rice Wine Vinegar
- 2 tablespoon thai chili sauce
- 1 teaspoon ginger, minced
- 1 teaspoon Dijon Mustard
Procedures:
- Toss Napa cabbage, carrots, raisins and spring onions together in a large salad bowl.
- Open the noodle package and pour the crushed noodles over coleslaw. Â Discard the seasoning packet.
- To make the dressing, whisk together the sesame oil, olive oil, rice wine, vinegar, Thai chili sauce, ginger and mustard
- Pour the dressing over the coleslaw mixture and toss.
- Refrigerate the coleslaw at least one hour to marry flavors before serving.
