Oatmeal Cookies

Oats are a natural source of fiber. So, too, are bananas and raisins. Enjoy all three in this tempting combination that is good for your cholesterol and your sugar levels as well. The natural sugars from the bananas give these cookies a natural sweetness that is hard to ignore.

Ingredients:

  • 3 pieces bananas, mashed
  • 2 cups quick-cooking oats, uncooked
  • 1/2 cup raisins
  • 1/3 cup unsalted butter, melted
  • 1/4 cup low-fat milk
  • 1 teaspoon vanilla extract

Procedures:

  1. Preheat oven to 350 F.
  2. In a mixing bowl, combine all ingredients, beating well.
  3. Set aside cookie mixture for 5 minutes, until oats absorb all the moisture.
  4. Using a teaspoon, shape cookies and drop onto ungreased cookie sheets.
  5. Bake for 15-20 minutes, until cookies are done.
  6. Let stand for 1 minute before removing from cookie sheet. Put onto wire racks to cool.
