No-Guilt Tiramisu

The Italian pick me up receives a sweet twist. Â Marsala is an Italian fortified wine that offers a sweet and strong kick to the dessert. Â In its absence, opt for a sweet red wine or omit altogether. Â The original mascarpone cheese has been replaced with a healthier low fat ricotta or cream cheese. Â It is one dessert you can’t get enough of.
Yield: 6 glasses
Ingredients:
- 1 tablespoon instant coffee
- 3/4 cup boiling water
- 2 tablespoons marsala or red wine
- 30 pcs sugar free sponge biscuits (about 125 gram packet)
- 1 cup low-fat ricotta or cream cheese
- 1/2 cup light sour cream
- 22 tablespoons splenda
- 2 teaspoons cocoa powder
Procedures:
- Stir coffee with hot boiling water in a bowl. Â Add the marsala. Â Set aside 18 pieces of the biscuit and coarsely chop the rest.
- Place three biscuits in six glasses/ramekins or custard cups. Â Drizzle half of coffee mixture on biscuits.
- Beat ricotta/cream cheese, sour cream, and splenda with mixer until it thickens slightly.
- Pour half of ricotta mixture into glasses. Â Sprinkle with biscuits. Â Cover with coffee mixture.
- Top with remaining coffee mixture and cocoa powder.
- Chill at least three hours or overnight
