Mussels Aux Amandes

Similar to our local baked tahong versions, this is a slightly upscale version using almonds.  If it is not available, you can replace it with other types of nuts.

Yield: 6 to 8 portions

Ingredients:

  • 1 clove garlic, crushed
  • 2 stalks parsley, chopped
  • 4 tablespoons margarine, softened
  • 1/2 cup wheat breadcrumbs soaked in
  • 2 tablespoons white wine
  • 1/2 cup ground almonds or other nuts
  • salt and pepper to taste
  • 1kg mussels, cooked and cleaned

Procedures:

  1. Preheat oven to 425F.
  2. Combine garlic, parsley and margarine.
  3. Squeeze breadcrumbs dry before adding to the margarine mixture.
  4. Finally, add the almonds (or other nuts) and season with salt and pepper.
  5. Layout mussels on a baking tray and put a little of the topping on each.
  6. Bake for 5-6 minutes.
