Mediterranean Tuna Panini

Everyone loves a tuna sandwich and here we offer a tuna filling with a little Mediterranean flair.
Yield: 4 servings
Ingredients:
- 1 can Light tuna chunk, drained
- 1 piece tomato, chopped
- 1/4 cup cottage cheese
- 2 tablespoons chopped artichoke hearts
- 1 piece red onion, minced
- 1 tablespoon pitted olives
- 1 teaspoon capers
- 1 teaspoon lemon juice
- freshly ground pepper to taste
- 8 slices whole wheat batard
- 2 teaspoons canola oil
Procedures:
- Have four heavy cans and a medium skillet (not nonstick) ready by the stove.
- Place tuna in a medium bowl and flake with a fork. Â Add tomato, cheese, artichokes, onion, olives, capers, lemon juice and pepper. Â Stir to combine. Â Divide the tuna mixture among 4 slices of bread (about 1/2 cup each). Â Top with the remaining bread.
- Heat half of oil in a large nonstick skillet over medium heat. Â Place 2 paninis in the pan. Â Place the medium skillet on top of the panini, then weigh it down with the cans. Â Cook the panini until golden on one side, about 2 minutes. Â Reduce the heat to medium-low, flip the panini, replace the top skillet and cans, and cook until the second side is golden, 1 to 3 minutes more. Â Repeat with another 1 teaspoon oil and the remaining panini
