Lean Taco

Who doesn’t enjoy a hearty taco, especially when its fillings are a healthier version? This recipe uses lean ground beef, but you can opt for ground or chopped chicken breast – the possibilities are just endless!

Yield: 6 portions

Ingredients:

  • 1 tablespoon olive oil
  • 1/2 kg lean ground beef
  • 1 piece red onion, chopped
  • 10 pieces tomatoes, chopped
  • 1/2 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon dried oregano
  • 6 piece corn taco shells
  • 3 pieces lettuce leaves, shredded
  • 1/4 cup low-fat cheese, grated

Procedures:

  1. Heat olive oil in a large nonstick skillet over medium heat, then saute beef and onion for about 10 minutes.
  2. Remove meat and drain excess oil.
  3. In a separate pan, combine the cooked meat, chopped tomatoes, cumin, chili powder, and oregano.
  4. Cook over medium heat, stirring occasionally, until most of the liquid has evaporated.  This will take about 3-6 minutes.
  5. To assemble, arrange lettuce leaves on bottom of taco shells, then spoon meat filling before topping with low-fat cheese.
