Herbed Garlic Mushroom

Garlic’s pungent nature belies its function in treating a wide variety of illnesses from the common cold to heart disease.  But its value as an aphrodisiac is what made it a sought after ingredient by the Egyptians, Greeks, Romans, Chinese, and Japanese.  Garlic stimulates not just passion but the appetite as well to awaken the senses and make food taste exceptional.

Mix it in with a little basil and parsley, olive oil and you have a terrific topping for your fresh mushrooms.

Yield: 6 to 8 portions

Ingredients:

  • 5 tbsp Olive oil
  • 5 pieces garlic cloves, sliced thinly
  • 2 cups fresh mushrooms, stems removed and caps wiped with damp towel to clean
  • 1/4 cup cooking wine
  • salt and pepper
  • 1 tbsp parsley, chopped
  • 1 tbsp basil chopped

Procedures:

  1. Heat a large frying pan and add 2/12 tbsp olive oil.  Gently brown garlic.  Set aside.
  2. Add remaining oil.  When oil is hot, saute the caps on high heat, tossing them about so they cook evenly.  Lightly brown them.
  3. Add wine.  Lower heat and cook until wine has been absorbed.  Season with salt and pepper.
  4. Remove from heat and serve sprinkled with garlic, parsley and basil.
