A pasta lunch can be filling and fulfilling in many ways. Â Try out our version that cuts out the unhealthy carbs and just offers up a simple way to enjoy it. Â You can prepare it ahead of time and just pack it up when ready to bring it for the day. Â If you are packing it for your kids, you can use whole-wheat soba noodles instead.
Yield: 4-6 servings
Ingredients:
- 1/4 kg Whole-wheat spaghetti, cooked according to package directions
- 4 slices lean cooked ham
- 1 red or green bell pepper chopped
- 3 pieces tomatoes, chopped
- Dressing:
- 1/2 cup light mayonnaise
- 1 tablespoon mustard
Procedures:
- Combine spaghetti, ham, bell pepper, tomatoes in a bowl.
- Mix together the mayonnaise and mustard for the pasta and stir into the spaghetti.
- Place in chiller until ready to pack for lunch.
