Healthy Pasta Bar

Remember all those tempting pasta stations when you attend a party or at a hotel?  Well, you can recreate that same idea in the comfort of your kitchen, with three healthy pasta sauces for everybody to enjoy and savor.

Yield: 4 to 6 portions

Ingredients:

  • 1/2 Kilo whole-wheat pasta
  • Pesto Sauce
    • 1 cup basil leaves
    • 1/2 cup walnuts
    • 4-6 cloves garlic
    • 1/2 cup olive oil
    • 1/4 teaspoon fine salt
    • 1/3 cup Parmesan cheese
  • Rich Tomato Sauce
    • 2 tablespoons olive oil
    • 1 large onion, chopped
    • 2 cloves garlic, chopped
    • 1 carrot finely chopped
    • 1 celery stick chopped
    • 1/2 kilo fresh tomatoes peeled and chopped
    • 1/2 cup white wine
    • 1/2 teaspoon salt
    • 1/2 teaspoon ground black pepper
    • 1 1/2 teaspoons dried oregano
  • Cheese and Walnut Sauce
    • 2 tablespoons unsalted butter
    • 3/4 cup button mushrooms, sliced
    • 1 cup light cream
    • 1/2 cup light cheese, grated
    • 1/2 cup walnuts chopped
    • 1/2 teaspoon ground black pepper

Procedures:

  1. Cook pasta according to package directions and set aside.
  2. For Basil Pesto:
    • Combine basil, walnuts, garlic in a food processor and blend.
    • Slowly add olive oil and blend again until a fine paste forms.
    • Remove from food processor and add salt and pepper. Set aside.
  3. For Rich Tomato Sauce:
    • Heat olive oil in a deep saucepan
    • Saute garlic, onion, carrots and celery.
    • Add tomatoes and stir.
    • Deglaze with white wine then add salt, pepper and oregano.
    • Cover for 20 minutes until tomatoes are cooked.  Set aside.
  4. For Cheese and Walnut Sauce:
    • Heat butter in a deep saucepan.
    • Add mushrooms and cook for about 2 minutes.
    • Add cream and cheese.  Cook until cheese melts.
    • Remove from heat and add walnuts and black pepper.
  5. Assembly:
    • set up the pasta and different sauces in serving bowls.  Choose the right sauce for you or even combine to make a different one.
