Sitsaro is the common pea or also referred as sweet and snow pea which is grown on vine plant with hallow stems, alternate leaves and noticeable stipules bigger than the obvate leaflets and with white pink or purple flowers. Scientifically called Pisum sativum, Sitsaro is the most expensive vegetable legume in the Philippines.

The seeds and leaves of Sitsaro are considered as vegetables. The seeds are particularly rich in protein and can be used as coffee substitute while the young shoots are included in vegetable salads. Sitsaro is especially known for its anticancer qualities through its methanol extract especially against cervical cancer. It is also rich in amino acids particularly lycine, leucine and arginine. Finally, the seeds are known for its dermatologic benefits since time immemorial. It has long been practice that powdered seeds can be use to cure and prevent acne and other skin rashes. Its extracts can improve melanin production for skin tanning and sunburn protection.

For diabetics, peas or sitsaro helps in blood sugar regulation. This is primarily attributed to the antioxidant and anti-inflammatory properties of the vegetable particularly catechin and epicatechin, alpha-carotene and beta-carotene, ferulic and caffeic phenolic acids and coumestrol and Pisumsaponins I and II pisomosides. These antioxidant and anti-inflammatory phytonutrients prevent unwanted oxidative stress and inflammation, which in turn affect the regulation of insulin and sugar.

In lieu of which, many public health organizations including the Diabetes Associations recommend the inclusion of pea legume managing and preventing diabetes disease and optimizing overall health of people.
