Garlic Soup Catalan

Clear broth, enricheed with raw egg yolk if desired.

Ingredients:

  • Olive Oil
  • Garlic flackes – fresh
  • Iodized salt
  • Fresh egg – 1 piece
  • Melba toast
  • Spring Onions – chopped
  • Chicken Broth

Procedures:

  1. Saute garlic in oil until golden brown.
  2. Add water.
  3. Simmer with salt and pepper.
  4. Add broth.
  5. Serve in a cup with 1 pc fresh whole egg.  Top with melba toast and garnish with chopped spring onions.
