Anytime of the year is a great time to enjoy our local iced specialties from halo-halo to mais con hielo. Â Even specialty ice shops have come up with their own versions that range from simple fruits to decadent chocolate creations. Â Here is a take-off offering fresh fruit versions without the extra cholesterol.
Yield:Â 8 to 10 portions
Ingredients:
- 1 piece ripe mango
- 4 juiced dalandans (calamansi can also be used; use juice equivalent to 1/2 cup and use 2 mangoes instead)
- 1 1/2 teaspoon powdered gelatin
- 2 egg whites
- 1 tablespoon splenda
Procedures:
- Squeeze the juice from dalandan or calamansi.
- Scoop mango flesh and combine it with 2 tablespoons of dalandan juice in blender or food processor.
- Sprinkle gelatin over 3 tablespoons dalandan juice in a heatproof bowl. Â Set aside until gelatin sets, then place over pan of hot water. Â Stir to dissolve before adding to mango mixture.
- Whisk egg whites until soft peaks form. Â Add Splenda. Â Fold into mango mixture.
- Place inside the freezer to set before serving.
