Fruit Crepe

Everybody loves crepes, and this recipe is so easy to make.  For more fun at parties and gatherings, prepare a section with the crepes and assorted fruits for fillings.

Yield: 12 portions

Ingredients:

  • Crepe Batter
  • 3/4  cup all purpose flour
  • 1/2 cup artificial sweetener
  • 1 piece egg, lightly beaten
  • 1 1/3 cup skim milk
  • 1 teaspoon canola oil
  • 1 piece orange or lemon wedge
  • 1 teaspoon unsalted butter
  • 2 tablespoons triple sec or any orange-flavored liqueur
  • 1/4 cup water
  • 2 cups assorted sliced fruits (bananas, mangoes, apples)

Procedures:

  1. Mix together flour and 1 tablespoon artificial sweetener with egg, milk and oil until a smooth batter is formed.  Set aside, covered to chill for 30 minutes.
  2. Pierce orange or lemon with a fork while melting butter in a pan.
  3. Add remaining artificial sweetener, orange liqueur and water.  Bring to a boil before reducing heat and simmering until mixture has reduced by half.
  4. Add fruits and stir to coat with syrup.
  5. Prepare crepes: Pour about 1/8 cup of batter onto greased crepe pan.  Cook both sides and repeat with remaining batter.
  6. Serve crepes with fruits inside.  Alternatively, prepare a crepe bar and let your guests serve themselves.
  7. Liqueur can be omitted and orange juice used instead.
