Fiber Coleslaw

Munch on this coleslaw version that uses light mayonnaise, allowing you to enjoy a classic cream-style coleslaw without all the calories and fat. Cabbage is packed with antioxidants and it is naturally high in fiber and low in carbohydrates.

Yield: 8-10 servings

Ingredients:

  • 6 cups shredded cabbage
  • 1/2 cup shredded carrot
  • 1/2 piece red bell pepper, cut into thin bite-size strips
  • 1/3 cup light mayonnaise
  • 2 tablespoons calamansi juice
  • 1 teaspoon splenda
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper

Procedures:

  1. In a large bowl, combine cabbage, carrot and red bell pepper.
  2. To make the dressing, stir together the mayonnaise, calamansi juice, splenda, salt and pepper.
  3. Pour dressing over cabbage mixture.  Toss to coat.
  4. Cover and chill for at least 2 hours before serving.
