Easy Fish Fingers

Kids will love this crunchy and delicious version that is so easy to make.  You can prepare the fish fillet and bread it ahead of time.  Just fry before packing it in the lunch box.  Serve with either bread slices or pasta and vegetable sticks.  You can use other white fish fillets as well, if Dory is not available.

Yield: 4-6 servings

Ingredients:

  • 1/2 kg dory fish fillet, cut into strips
  • 1/4 teaspoon iodized salt
  • 1/4 teaspoon ground black pepper
  • 1/4 cup all-purpose flour
  • 2 pieces eggs, beaten
  • 1/4 cup japanese breadcrumbs
  • 1/2 cup canola oil
  • 1 piece carrot, cut into sticks
  • Ketchup-mayo dip
    • 1/2 cup light mayonnaise
    • 2 tablespoons ketchup

Procedures:

  1. Season dory fish fillet with salt and pepper.
  2. Bread fish fillet by dipping in flour, beaten eggs, and breadcrumbs.  Keep breaded fish aside in a covered container in the chiller if you are not using them right away.
  3. Heat canola oil in a frying pan and fry breaded fish fillets.
  4. Drain on paper towels.
  5. Serve with vegetable sticks and ketchup-mayo dip.
