Diet Cheesecake

This baked cheesecake has all the natural sumptuousness of a New-York cheesecake less the sweetness.  Although this recipe is served plain, you can top it with fruits in season as desired.

Yield: 10 portions

Ingredients:

  • 4 cups low fat cottage cheese
  • 3 pieces eggs, separated
  • 2 tablespoons maltose syrup
  • 1/4 cup artificial sweetener
  • 3 tablespoons cornstarch
  • 1 tablespoon vanilla extract
  • 1/3 cup wheat graham cracker crumbs

Procedures:

  1. Preheat oven to 350 F.
  2. Beat cheese until smooth.
  3. Add egg yolks, maltose, artificial sweetener, cornstarch and vanilla extract.  Mix until well blended.
  4. In a separate bowl, whisk the egg whites until soft peaks form.  Carefully fold into the cheese mixture.
  5. Use either a 9″ round springform or square pan for the cake.  Spray with non-stick cooking spray.
  6. Layer bottom with the graham-cracker crumbs.  Pour cheese mixture on top.
  7. Bake 30 to 40 minutes until top is golden and cake is set.
