Curried Vegetable Whole Wheat Toast

Want something healthy for a quick bite? Chef Junjun shares this recipe which he says is a favorite by many vegetarians. This vegetable-topped toast can be made more flavorful as Chef Junjun recommends curry powder to give it a meaty and “much—needed full bodied taste.”

Ingredients:

  • 1/2 pc Carrot, finely chopped
  • 1/2 pc Onion, finely chopped
  • 1/2 pc Celery stick, finely chopped
  • 1/2 Leeks, finely chopped
  • 2-3 pcs Green beans, finely chopped
  • 2 tablespoons skim milk
  • 1/4 teaspoon curry powder
  • 1 pinch salt
  • 1/8 teaspoon ground pepper
  • 4-5 pcs whole wheat bread

Procedures:

  1. Saute all vegetables in olive oil. Season with salt and pepper. Add in curry powder and mix well.
  2. Set aside to cool.
  3. Mix cream cheese and skim milk. Pour into vegetables and mix until well-binded.
  4. Top this mixture over sliced toasted whole wheat bread.
