Want something healthy for a quick bite? Chef Junjun shares this recipe which he says is a favorite by many vegetarians. This vegetable-topped toast can be made more flavorful as Chef Junjun recommends curry powder to give it a meaty and “much—needed full bodied taste.”
Ingredients:
- 1/2 pc Carrot, finely chopped
- 1/2 pc Onion, finely chopped
- 1/2 pc Celery stick, finely chopped
- 1/2 Leeks, finely chopped
- 2-3 pcs Green beans, finely chopped
- 2 tablespoons skim milk
- 1/4 teaspoon curry powder
- 1 pinch salt
- 1/8 teaspoon ground pepper
- 4-5 pcs whole wheat bread
Procedures:
- Saute all vegetables in olive oil. Season with salt and pepper. Add in curry powder and mix well.
- Set aside to cool.
- Mix cream cheese and skim milk. Pour into vegetables and mix until well-binded.
- Top this mixture over sliced toasted whole wheat bread.
