Coffee Custard

Everyone has their own special leche flan memory.  This recipe lets you indulge in a healthy custard version using coffee to flavor it.  If you prefer, you can also use instant coffee or espresso powder.

Yield: 4 portions

Ingredients:

  • 1 1/2 cups skim milk
  • 2 pieces eggs, beaten
  • 3 tablespoons splenda or artificial sweetener
  • 2 teaspoons instant decaffeinated coffee
  • 1 teaspoon vanilla extract
  • sprinkle cinnamon powder, for garnish

Procedures:

  1. Whisk together milk, eggs, artificial sweetener, coffee and vanilla extract.  Make sure everything is well blended.
  2. Pour into custard cups or ramekins and arrange in a medium sized deep pan (about 10″).
  3. Fill water level up to 1/2″ from top edge of container.  Bring water to a boil.
  4. Cover and reduce heat to a simmer.  Cook for around 10 minutes.
  5. Remove from the pan and cover with plastic wrap.  Chill for at least 3 hours.
  6. Sprinkle cinnamon on top before serving.
