Chicken Burger Pita Pocket

Burgers are always a winning choice for anyone.  Enjoy this healthier version that uses ground chicken, and wrap them in pita pockets for a different experience.

Yield: 4 servings

Ingredients:

  • 1 piece onion, chopped
  • 1/4 kg ground chicken
  • 1/2 cup wheat breadcrumbs
  • 1 piece egg, beaten
  • 1 tablespoon tomato paste
  • 1/2 teaspoon iodized salt
  • 1/2 teaspoon ground black pepper
  • 4 pieces whole-wheat pita pockets
  • 1/3 cup barbecue sauce
  • 2 leaves lettuce, shredded
  • 4 pieces tomatoes, quartered

Procedures:

  1. Combine onion, chicken, breadcrumbs, egg, and tomato paste until well mixed.
  2. Season with salt and pepper.
  3. Form chicken mixture into patties and assemble on a plate. Cover with plastic wrap  and set aside in the chiller until ready to use.
  4. To cook, heat nonstick frying pan.
  5. Place patties on nonstick frying pan and cook, turning on both sides until brown and done.  This will take about 6-8 minutes.  Set aside and slice into strips.
  6. To assemble, cut pita pocket into half.
  7. Open up and spread with barbecue sauce.
  8. Fill pockets with lettuce, tomatoes, and chicken patty.
  9. Wrap and pack into lunch box.
