Chicken Bolognese Spaghetti

Making a classic tomato sauce is a must for everyone.  The recipe replaces the ground beef with chicken and uses fresh tomatoes but you can also use whole canned tomatoes if you prefer.  I sometimes add dried herbs such as oregano, thyme and tarragon to add a little spice.

Yield: 6 portions

Ingredients:

  • 1/4 cup olive oil
  • 2 pieces medium onions, peeled and chopped
  • 2 pieces garlic cloves, peeled and chopped
  • 1 piece carrot, peeled and chopped
  • 1 kilo ground chicken
  • 1 1/2 cups cooking wine
  • 500 grams tomatoes, peeled, seeded and chopped
  • 1 tablespoon tomato paste
  • salt and pepper
  • 1 cup low fat or skim milk
  • 500 grams whole-wheat spaghetti, cooked

Procedures:

  1. Heat oil in a big saute pan.  Add onions, garlic and carrots.  Saute until soft but not browned.
  2. Add ground chicken and saute until browned (about 5 minutes).
  3. Add wine and simmer until wine has reduced (about 8-10 minutes).
  4. Add tomatoes, tomato paste, salt and pepper and water. Cover and cook for 1-1 1/2 hours until sauce has thickened.
  5. Add milk and mix.
  6. Serve over spaghetti.
