Caramelized Apple & Feta Salad with Garlic Toast

A rich dessert that combines luscious white chocolate with the tangy strawberry sauce. You can use milk or dark chocolate if you prefer.

Yield: 6 to 8 portions


  • 15g unsalted butter
  • 1/2 tsp olive oil
  • 2 apples, cored and cut into thick wedges
  • Small baguette cut into lcm-thick slices
  • 1 garlic clove, halved
  • 175g feta, crumbled
  • 120g lettuce
  • Dressing:
    • 2 tbsp cider vinegar 2 tsp honey
    • 60m1 olive oil


  1. Heat the butter and oil in a frying pan over medium-high heat. Add the apple and cook, turning once, for 5 minutes until lightly caramelized. Set aside.
  2. Rub the bread on both sides with the cut sides of the garlic clove, spread with light olive oil. Place the bread under the grill, turning once, until browned on both sides.
  3. For the dressing, combine all the ingredients in a jar and shake to combine.
  4. To assemble the salad, combine the apple, garlic toasts, feta cheese and lettuce leaves in a large bowl. Add the dressing and toss to combine.
