Ala Leche Flan

Everyone has fond memories of the best leche flan he or she has tasted.  But chances are high that these creamy concoctions may not always offer the best for our health.  Here is a healthier rendition that is sweet yet not too sweet.

Yield: 8 – 10 portions

Ingredients:

  • Caramel Sauce
    • 4 tablespoons water
    • 1/2 cup splenda
    • 1/4 cup muscovado sugard
  • Flan
    • 2 1/2 cups low fat milk
    • 1 1/2 tablespoon vanilla
    • 1/4 cup splenda
    • 4 eggs
    • 4 egg yolks

Caramel Sauce Procedures:

  1. Prepare sauce by melting splenda, sugar and water together until sugar has dissolved.
  2. Bring to a boil until syrup turns golden brown.  Pour into ramekins or molds.

Flan Procedures:

  1. Heat milk until almost boiling.  Take away from heat and add vanilla.  Let it stand for 5 minutes.
  2. In a mixing bowl, whisk splenda, eggs and egg yolks until creamy.
  3. Whisk in vanilla-flavored milk into egg mixture.  Pour into ramekins or molds.
  4. Put in baking dish with hot water coming up 2/3 of the way on the sides.
  5. Bake for 30-35 minutes until set.
  6. Remove from heat and chill for 3 hours.
